- 1/2 cup flour
- 1 egg
- 35 grams butter
- ½ tablespoon oil
- 1 tablespoon milk
- ½ of the onion
- 1/2 cup spinach
- 1/4 cup cottage cheese, unsalted
- Salt and ground pepper to taste
In a food processor, add the flour, 1 egg, milk, butter, and a pinch of salt. Blend them well till smooth. Let the dough set in the fridge for almost 20 minutes.
Meanwhile, chop the onions and heat the oil in a pan. Fry the onions into the pan till translucent, then add spinach and cook for 2 minutes or till the spinach is wilted.
In a bowl, beat 1 egg with the cottage cheese. Drain the spinach very well, chop, and add into the cheese mixture.
After 20 minutes, divide the dough into 2 equal parts and roll each part into a round shape. Fill the molds with the dough. Then add spinach filling over the dough in the molds.
Put the quiches in the oven and bake for almost 20 minutes at 250 degrees. Serve and enjoy!
