Gluten Free Skillet-Baked Eggs with Tomato and Pepper

Ingredients

  • 4 tomatoes
  • 2 eggs
  • 1 green pepper
  • 1 yellow pepper
  • 1 teaspoon olive oil
  • A pinch of sea salt
  • A pinch of oregano
  • A pinch of black pepper

Method

Step 1

Preheat oven for 300 degrees F

Step 2

Deseed the peppers and cut them into thin strips.

Step 3

Cut the tomatoes into small cubes.

Step 4

In an ovenproof skillet, add the olive oil.

Step 5

Heat it over medium heat and fry the tomatoes and pepper with salt and pepper for 5 minutes.

Step 6

Take off the heat and crack the eggs open onto the skillet. Sprinkle oregano on top and add some more salt on top.

Step 7

Bake in the oven over 300 degrees F for just 10 minutes.
