Paleo Almond Cookies with Almonds on top2015-12-02

- 2 cup of almond flour
- ¼ cup of almonds, chopped
- A pinch of sea salt
- 1/4 cup organic honey
- 4 tbsp of almond butter (cold)
- 4 tablespoon of almond milk
- 1 teaspoon baking soda
In a mixing bowl, beat your butter preferably using an electric beater.
Add in the flour, almond milk, baking soda, salt and mix until smooth.
Fold in half with the chopped almonds.
Refrigerate the dough for 30 minutes. Make sure to cover it with plastic wrap, otherwise it would get hardened.
Preheat the oven to 350 degrees and grease your cookie sheet.
Roll your dough into thin line and cut into your desired shape using a cookie cutter.
Arrange your cookies onto the greased tray and sprinkle the remaining chopped almond on top.
Bake for around 10 minutes.
