- 2 cups blanched almonds
- 1/2 cup coconut sugar
- 4 tbsp. cocoa powder
- 2 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 3 oz. unsweetened dark chocolate
- 1/2 tsp. almond extract
- 2 large egg whites
- 1 cup Sucanat
- 3/4 cup arrowroot powder
Preheat the oven to 325°F.Line baking trays with parchment paper.
Into a large blender, combine almonds with sugar and blend until finely ground.
Add in spices, cocoa and chocolate pieces and blend further for several seconds until powdery. Transfer dough into a bowl and let sit for several minutes.
Add egg whites and almond extract, mix until dough is formed.
Meanwhile, blend sucanat with arrowroot powder until powdery. Sprinkle this sugar icing substitute into a sheet of wax paper.
Roll out the dough on the wax paper sprinkled with “icing sugar”. Use a cookie cutter to create star-formed cookies.
Place these forms onto the prepared baking tray, upside down and bake for about 15 minutes.
