- 1 1/4 cups almond flour, blanched
- 1/4 cup honey
- 1 tablespoon arrowroot powder
- 1 tablespoon lemon zest
- 1/4 cup almonds, toasted and chopped
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
Mix almond flour, baking soda, sea salt, and arrowroot powder in a processor and process till well mixed.
Now add in honey and lemon zest and process again till dough forms a ball shape.
Remove the dough from processor and line a baking sheet with parchment paper.
Now make 2 logs of this dough on baking sheet and bake in the oven for almost 15 minutes at 350. After 15 minutes, remove from the oven and let it cool for an hour.
Cut the logs into desired slices with a sharp knife and spread them on a baking sheet. Bake in the oven for almost 15 minutes at 300.
Remove from the oven and let them cool.
Serve and enjoy!
