Paleo Mexican Wedding Cookies

Ingredients

  • 2 cups almond flour
  • ⅛ teaspoon sea salt
  • ⅛ teaspoon baking soda
  • 2 tablespoons palm shortening
  • 2 tablespoons honey
  • 1 teaspoons vanilla extract
  • ½ cup pecans, toasted and chopped
  • ½ cup powdered coconut sugar

Method

Step 1

Put almond flour, salt and baking soda in a food processor or blender

Step 2

Blend in the palm shortening, honey and vanilla then add the pecans

Step 3

Remove the dough out of the processor and use your hands to form cookies into balls. Be sure to press very firmly to make them tight.

Step 4

Bake at 350° for 7-10 minutes

Step 5

Remove from oven and allow to cool for 20 minutes

Step 6

Shower or dip cookies using the powdered coconut sugar
